Substitutions/Adjustments
Depending on your class size, you might want to double your batch. However, a little goes a long way when you use a cookie sheet. (And these bars are very rich!)
It is possible to use gluten-free flour in this recipe, but you might need to add a little extra. You can skip the nuts for students with allergies without affecting the bars’ taste.
If you do not have a baking sheet, it is possible to successfully make this recipe in a 9×13 pan. However, your bars with be a little softer and a lot thicker.
Let’s Get Started!
- Preheat the oven to 350 degrees. Take out a 15 ½ x 10 ½ x 1” baking sheet. You will need two bowls to mix your dry and wet ingredients and a pan to melt your filling ingredients.
- Start by creaming the butter and sugar together in the first bowl. You want the mixture to be light and fluffy. Mix in eggs and vanilla.
- In the second bowl, sift together the baking soda, salt, and flour. Mix in the oatmeal.
- Combine and stir your wet and dry ingredients.
- Spread 2/3 of the oatmeal mixture in the bottom of your baking sheet. Set aside for now.
- On the stove, melt the chocolate chips, sweetened condensed milk, butter, and salt from your filling ingredients. When the mixture is smooth, add your vanilla and nuts (if desired).
- Cover the oatmeal mixture on your baking sheet with the chocolate filling. Dot the filling with the remaining 1/3 of the oatmeal mixture.
- Bake for 25-30 minutes.
Enjoy!
